The Inspiration
Menu curation begins with our expert chef, Will Peregrine. Having trained in prestigious kitchens worldwide, Will brings inspiration from his travels across more than 30 countries, including Italy, Spain, and Indonesia. His passion for showcasing fresh, local ingredients is evident in every dish crafted in Eclipse’s modern, open-plan galley.
In line with our commitment to protecting the environments we explore, we prioritise the health and well-being of our guests. Will’s meals are always fresh, light, and thoughtfully prepared, ensuring every bite is both nourishing and delightful.

The Process
The open galley onboard Eclipse creates a unique connection between guests and the chef. Guests are invited to observe, interact, and even participate in the culinary process. As one guest shared:
“The open kitchen meant we had great interactions with the crew, including chatting to Will about the next meal he was cooking and sharing info on our favorite recipes and restaurants. The food and alcohol were exceptional, and cooking the fish and mud crabs we caught was a highlight, along with dishes you’d only find in top restaurants.”

The Experience
Meals are often enjoyed in one of our premium entertaining spaces. A favorite among guests is the alfresco deck, a versatile area that can be enclosed for intimate settings or opened to embrace the surrounding natural beauty.
Dining extends beyond the luxurious deck spaces to include scenic, immersive experiences. The breathtaking landscapes of our destinations serve as the perfect backdrop for unforgettable meals.
In The Kimberley, guests might join Will on a morning mud-crabbing adventure to gather enough fresh Kimberley Mud Crabs for a feast. By sunset, these crabs are transformed into a flavorful chili crab dish, enjoyed on a tidal island as the sun dips behind the monumental Montgomery Reef.
At the Montebello Islands, guests can try their hand at trawling for Spanish mackerel as Eclipse sails into a secluded anchorage. Watch as Jackson expertly fillets the catch, and Will prepares it into ceviche, served on the pristine shores of Vodka Beach during an exclusive beach setup.
In Western Australia’s South West, Will celebrates the region’s incredible local produce with dishes like flame-grilled scallops at sunset on a hidden cove in Geographe Bay.
